    Step into a state-of-the-art kitchen studio owned by the Caldesi's. Learn to create delicious Italian dishes! On arrival at a morning class, enjoy tea or coffee and biscotti or a glass of Prosecco and freshly made Focaccia at an evening class. The chef will demonstrate the making of fresh pasta that you're going to prepare (four in total, including long tagliatelle and stuffed pasta with ravioli). Put your apron on and with friendly, expert advice on hand throughout, get cooking. Then sit down to enjoy your creations in the light, airy seated kitchen area. Your meal includes a half bottle of Italian wine, chosen to complement your food. Water, tea and coffee are available all day and you'll take home a free gift.

    Availability

    Weekend dates approximately three times a year.

    Participant Guidelines

    Minimum age is 16, or 14 if accompanied by another Red Letter Days booked voucher holder (an adult aged 18 or over). The venue welcomes disabled participants and offers full wheelchair access.

    Duration

    In total, expect your experience to last around four hours. Preparation and cooking (antipasti, three types of pasta, three sauces and a dessert) should last around two and a half hours.

    Numbers On Day

    Share one of two group dining tables, with a maximum of 22 diners in total (16 main participants and six guests), plus the chef and the assistant.

    Spectators

    The masterclass is just for the participants, but a dining guest ticket can be purchased (code CCLIG) to share the results.

    Dress Code

    Aprons are provided to protect your clothes whilst cooking. If you'd like to visit the restaurant/bar area, dress code is smart casual with no trainers please.

    From the minute you walk in its a very welcoming and friendly atmosphere. The chefs were superb and whilst watching the sauces being made picked up so many useful tips. The pasta making was excellent and something I personally was wanting to do. The various dishes were then served to us for lunch - so delicious. I would highly recommend this Cookery School and would like to return myself one day.

    We were welcomed by Romano with a smile and we got straight into making pasta sauces - he made it all look so easy and fun. Everyone was hands on and taking part in the prep and cooking. The banter was good and we were made to feel part of a team. Overall a truly wonderful experience which was topped by the arrival of my partner Linda eager to sample the results of my culinary labours!

    From start to finish the whole experience was the best. I learn't new cooking skills and will certainly be trying them out on my family. The Chef was very friendly and we all had a great time. I left very full after eating the food that was cooked a little tiddly from the amount of wine I drank and best of all will take home a great memory of the day.

    From beginner to intermediate we all learnt something from this hands on course. A three course lunch with two alternatives in each course was prepared by students with expert guidance from Stefano. A mixed attendance of men and women from 20-70 years, singles and couples made for a friendly group. Lunch of student-prepared dishes plus a glass of wine and a chat with the Master Chef before leaving with a goodie bag of the most delicious Cantuccini. An excellent day which I would recommend without reservation.

    This experience has changed the way I will approach Italian cooking. An excellent experience from the moment I turned up. I cannot praise Stefano the chef enough who had a wealth of knowledge and experience to share and ensured that everyone was actively involved throughout the day. The hints and tips you learn here you can't find in a book and Stefano was happy to explain everything in as much detail as was asked for. The day ended with Stefano and his assistants serving the food we had cooked. The proof of quality of the experience was in the food which was excellent. I would certainly take part in another experience like this.

    A warm welcome, coffee, tea etc. and very relaxed. Not a bit intimidating with good humoured light hearted informative instruction. The class contained kindred spirits, all keen to learn. I came away able to make my own pasta with lots of great tips on what not to buy in supermarkets and how to get delicious flavour into dishes. Thoroughly recommended.

    I went to this evening masterclass worried about my abilities. We were all made to feel at ease and the pace of the class was perfect. Everyone was easygoing and friendly, staff and participants. I am ordering my pasta machine now! Cannot believe how straight forward it all was, being shown instead of reading recipes books is the best way of building confidence and learning. You pick up tips that will stay with you always, very worthwhile and enjoyable.

    Absolutely loved the Masterclass. I now have the 'secret' to improving some of the simple italian recipes that I can already cook, and have come away with lots of new techniques that I can't wait to try out at home. Now off to buy my pasta maker!

    The chef Stefano and his assistant Jo spent time showing us and getting us to prepare a starter, 3 pasta dishes and a dessert. Stefano kept us engaged throughout. I have come away not being afraid to use the pasta machine and with 4 new dishes to have a go at impressing friends and family. Thank you Stefano and Jo!

    A very enjoyable evening spent at the Caldesi cookery school. The demonstrations given by the chef were excellent, including some very helpful hints and tips, from how to chop an onion to cooking the perfect tomato sauce and to the Italian approach to food and cookery. This might sound basic but it was surprisingly useful! The best bit was getting our hands into making pasta, which was amazingly much easier than I expected. We then enjoyed the fruits of our labours sitting down to eat a very tasty meal. The course is not for those seeking more sophisticated techniques, instead it offers a good grounding in some basic techniques of Italian cookery.

    The day was a good experience, the chef fun and the other participants great too. Relaxed day and new experiences tried and lessons learnt. How not to carry a knife, how to chop onions and the most rewarding was how to make gnocchi and ravioli and other pasta. The eating afterwards was great too!

    Didn't know what to expect but enjoyed it from start to finish. It was relaxed and informal and while he was very entertaining, Stefano taught us a lot. I liked the way we all took part together making the sauces and desserts and then were able to each make our own pasta. I haven't ever bothered as I thought it would be complicated. Wrong! It's dead simple and I shall certainly be making it at home. We all talked of going straight from the class to buy our own pasta rolling machine! To finish with the meal when we could eat all the goodies we had been making, with the wine flowing and even fresh flowers on the table was perfect. Not to mention the fact that we didn't have to do any of the washing up! You couldn't ask for more!! So well done to all those involved in organising the Italian Cookery Masterclass! It was certainly a winner with me!! A true Red Letter Day!

    Well organised. Great fun. Good clear instructions from chef. Everyone joined in and learnt a lot. The meal which we all prepared together and ate at the end well worth all the effort.
