    Learn how to prepare a fresh Italian meal in a state-of-the-art kitchen studio owned by the Caldesi's. Previous cooking experience isn't necessary, as an experienced chef is on hand throughout. On arrival, sip a cup of tea or coffee, with a biscotti (at the morning classes) or a glass of Prosecco and freshly made Focaccia (at evening classes). The chef will demonstrate the art of pasta making, which you will go on to prepare (four in total, including long tagliatelle and stuffed pasta with ravioli). Once cooking is finished, sit down and enjoy the creations in the light, airy seated kitchen area. The meal includes half a bottle of specially selected Italian wine and tea coffee and water are also available on the day. Also take home a free gift!

    Availability

    Weekend dates approximately three times a year.

    Participant Guidelines

    Minimum age is 16, or 14 if accompanied by another Red Letter Days booked holder (an adult aged 18 or over). The venue welcomes disabled participants and offers full wheelchair access.

    Duration

    In total, expect your experience to last around four hours. Preparation and cooking (antipasti, three types of pasta, three sauces and a dessert) should last around two and a half hours.

    Numbers On Day

    Share one of two group dining tables, with a maximum of 22 diners in total (16 main participants and six guests), plus the chef and the assistant.

    Spectators

    The masterclass is just for the participants, but a dining guest ticket can be purchased (code CCLIG) to share the results.

    Dress Code

    Aprons are provided to protect your clothes whilst cooking. If you'd like to visit the restaurant/bar area, dress code is smart casual with no trainers please.

    Although I consider myself as a reasonably good cook, I was looking forward to this 4 hours session to learn tips and basic recipes I had never explored : make my fresh pasta and finally find a use for this machine my mum gave me last christmas, cook a mouthwatering, healthy yet simple homemade tomato sauce, enjoy the crispiness of freshly baked cantucci... I left the course with new horizons to explore and am looking forward to make new dishes to my beloved ones. What's better?

    Our group of 16 were keen learners and we all got our hands stuck in. Stefano was a patient tutor. It was worth standing for hours just so to be able to enjoy the fruits of our labour - fabulous and delicious! The very next day we made one of the recipes that we did at the masterclass.

    Homemade gnocchi and pesto sauce will be featuring at our dinner table from now on - simple and easy recipes with lots of useful tips and techniques. The chocolate and almond cake is a winner and have promised to make it for my daughters birthday. Stefano, the chef, is a great teacher and we all left confident that we could cook it at home.     What a great evening. We enjoyed every minute of what was a truly memorable experience. We had so much fun learning how to make pasta, in the company of like-minded people. To be honest I do not know which I enjoyed most, cooking the food or eating it! Our grateful thanks to all concerned.
