
Tuscan Cooking with Giancarlo Caldesi
Overview
Join chef Giancarlo Caldesi (when available) in a celebration of Tuscan cuisine at La Cucina Caldesi, and learn how to prepare some traditional Tuscan main courses, such as 'the hunter's catch' roast or his signature Tuscan lasagne with an array of seasonal 'contorni' (side dishes). After meeting the chef and fellow students over coffee and biscotti, the menu is introduced. Then it's time to cook! The ingredients for each recipe are laid out ready to use, and the flexible format of the class provides plenty of opportunity to get involved. Finally, you can relax and enjoy the delicious meal you have created, accompanied by a glass of Italian wine, in the company of your teacher and fellow students. Buon appetito!

Classes run daytime and evening, at least once every two months. - Participant Guidelines
Minimum age is 16 (or 14 if accompanied by another Red Letter Days booked voucher holder aged 18 or over). La Cucina Caldesi welcomes disabled participants and has full wheelchair access. No experience is necessary and novice cooks are very welcome. - Duration
Preparation and cooking will last for around two and a half hours. Expect to be at the venue for around four hours in total. - Numbers on the Day
Share one of two group dining tables, with a maximum of 16 participants, plus the chef and assistant. - Dress Code
Aprons are provided. The restaurant and bar have a smart casual dress code, no trainers please. - Other Info
If Giancarlo is not available, another top class cook of Tuscan cuisine will teach the class.
